Washoku
Japanese cuisine, known as washoku, is known for its simplicity, uses seasonal resources to produce and process traditional foods. In 2013, washoku was listed as UNESCO’s Intangible Cultural Heritage of the Humanity.
In Kyoto, there is a shrine dedicated to cooking and cuisine, called Yamakage shrine which is located in the Yoshida mountain. The name comes after Fujiwara No Yamakage (824-888) where he created the school of Kyoto cuisine, Shijyou-ryuhouchoudo. Since there were no preserved records of the origins of cooking washoku, Fujiwara No Yamakage defined washoku which became the essence of Japanese cuisine to this day.
Kyoto is full of good restaurants such as: Mankamerou, Kinobu, Hayashi, Hyotei, and etc. which there is an opportunity to choose the restaurant to experience.
